This is a recipe from Babs, and one of my favorite winter meals. It’s a little more elegant than clam chowder, and unlike the original recipe, I substitute whole milk for the light cream.
Ingredients
2 lbs white fish fillets like haddock or cod (or you can also add salmon, scallops and shrimp)
2 medium potatoes, diced
2 teaspoons salt
1/2 teaspoon pepper
2 large or 3 small onions, sliced into very thin rings
1 clove garlic, smashed
4 whole cloves
1/2 cup (1 stick) butter
Few sprigs fresh thyme or 1/2 teaspoon dried thyme
1/2 cup dry white wine
1 1/2 cups boiling water
2 cups light cream, milk or combo
Instructions
Heat oven to 375
Place all ingredient , except for cream/milk, into an oven safe pot
Bake for one hour
Remove from oven, add 2 cups heated milk or cream
