This is basically just like sesame noodles but without the noodles. But it is so good, you’ll eat the whole bowl. Make your life easy and buy shredded veggies in a bag.
Ingredients
Shredded green and red cabbage
Shredded carrots
Chopped scallion
Shelled edamame, or leftover peas
Chopped peanuts, unsalted
Sesame seeds
Chopped cilantro, parsley, Thai basil, etc.
Dressing
1/3 cup grape seed or vegetable oil
6 tablespoons rice wine vinegar
lime juice from 1 lime
2 tablespoons peanut butter
2 tablespoons soy sauce
Fresh grated ginger or pinch of dried ginger
Salt
Pepper
Instructions
Whisk up the dressing in a big bowl, OR buy a jar of Trader Joe’s Ginger Peanut Dressing
Toss everything together in the bowl
Advanced tip: Add leftover chicken, shrimp, or beef
