This is a really flavorful, quick and healthy soup that is super easy to make. (If you add coconut milk, it will be outstanding but less healthy)
Ingredients
1 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, chopped
1 teaspoon fresh ginger, peeled, and chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon red pepper flakes
1 box chicken stock (or fish stock if you can find it)
1 pound white fish, cut into cubes
Salt and pepper to taste
1/3 cup uncooked white rice
Cilantro for garnish
Instructions
Sauté onion in oil 3-4 minutes
Add garlic, ginger, cumin, coriander and pepper flakes, cook 1 minute
Add stock, salt, pepper and bring to boil
Add rice, simmer about 12 minutes
Add fish, simmer about 10 minutes, until fish is tender and beginning to flake
Pour into bowls
Garnish with cilantro
Advanced tip: For a special occasion, add some coconut milk and make it super rich and delicious.
